There is no better curative when you are feeling queasy than a poached egg. Poached eggs go well with butter, so it is nice to make a piece of buttered toast to serve with the egg. Use a cookie cutter to cut out rounds of thin white bread.

Cook gently in clarified butter.

Bring about 3 inches of salted water to a gentle simmer in a skillet. Crack the eggs as close to the surface as possible.

After about 5 minutes, lift out the eggs with a slotted spoon and cut away any spongy white, creating a perfectly neat egg.

Arrange lightly creamed spinach on a round crouton, set a poached egg on top, and top with Hollandaise Sauce.

You can skip the poached eggs and leave this Spanish soup lean (known as sopa de ajo), which makes it almost a tonic, but there is something about the egg yolks melting into the broth that makes the whole concoction especially satisfying. This version contains a lot of fresh marjoram, but a more traditional version would be made with thyme. A Mexican version could be made with oregano.

This is a recipe that I have only played around with recently, but it works really well both as a starter or as a main course, and is rich enough to be satisfying for both. The thing I like about this recipe is that it's not overly spiced or flavoured in addition to the mushrooms, and therefore allows the natural flavour of the mushrooms to come out.

poached egg is an egg that has been cooked in simmering liquid.A perfect poaching is cooked white and inside a runny yolk.To prevent dispersion of the white of the egg, a small amount of vinegar may be added to the boiling water.stuffing the poached egg in a bread is quite interesting and fun.
